Air-fried shrimp tacos with creamy cilantro sauce, topped with pickled jalapenos and optional hot sauce for an extra kick.
Ingredients:
  • 0.25 cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons chopped cilantro
  • 1 teaspoon apple cider vinegar
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon cumin
  • 0.125 teaspoon kosher salt
  • 12 ounces uncooked medium shrimp, peeled and deveined
  • 1 teaspoon olive oil
  • 1 teaspoon taco seasoning
  • 4 (10 inch) flour tortillas, toasted
  • 1 cup shredded cabbage
Instructions:
  • In a small bowl, mix together yogurt, mayonnaise, cilantro, vinegar, garlic powder, onion powder, cumin, and salt until well blended. Set aside.
  • Preheat the air fryer to a perfect 400 degrees F (200 degrees C).
  • Dry the shrimp with a paper towel, then transfer them to a bowl. Drizzle with olive oil and sprinkle with taco seasoning. Mix thoroughly to coat the shrimp evenly.
  • Add the shrimp to the air fryer basket and cook for 4 minutes. Give them a shake and continue cooking for an additional 3 minutes until perfectly cooked.
  • Lay out the tortillas on serving plates. Fill each tortilla with cabbage and shrimp. Drizzle with the remaining sauce and enjoy.
