Air-fried potato tacos oozing with buttery instant potatoes, Cheddar, and cotija cheeses for an easy and satisfying crunch.
Ingredients:
  • 1 (4 ounce) package instant mashed potatoes (such as Idahoan® Buttery Homestyle®)
  • 0.5 cup shredded Cheddar cheese
  • 1 green onion, chopped
  • 0.5 teaspoon ground cumin
  • 10 corn tortillas
  • 1 serving nonstick cooking spray
  • 0.5 cup salsa verde
  • 0.25 cup crumbled cotija cheese
Instructions:
  • 1. Bring water to a boil in a saucepan. Remove from heat and stir in instant mashed potatoes until well combined. Allow to sit for 5 minutes. Mix in Cheddar cheese, green onion, and cumin.
  • Preheat the air fryer to 400°F (200°C).
  • Place tortillas in a damp paper towel and microwave on high for 20 seconds until they are warm and ready to enjoy.
  • Place a generous spoonful of the flavorful potato mixture in the center of each tortilla, then elegantly fold them over to create delicious tacos. Repeat this with all the remaining tortillas.
  • In batches, air fry the tacos until crispy, about 5 minutes. Transfer to a serving platter and repeat with remaining tacos, spraying the tops with cooking spray before cooking each batch.
  • Pour the salsa verde generously over the tacos and sprinkle with crumbled cotija cheese.
