Air-fried honey-roasted carrots with buttery balsamic glaze and chives - a quick and delicious weeknight side dish.
Ingredients:
  • olive oil for brushing
  • 1 teaspoon honey
  • 0.25 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper
  • 1 pound tri-colored baby carrots
  • 1 tablespoon balsamic glaze
  • 2 teaspoons chopped fresh chives
Instructions:
  • Coat the air fryer basket with a touch of fragrant olive oil.
  • In a large bowl, combine 1 tablespoon of olive oil with honey, salt, and pepper, whisking until well mixed. Add carrots and toss them until coated in the mixture. Place the carrots in the air fryer basket in a single layer, working in batches if necessary.
  • Air fry the carrots at 390 degrees F (200 degrees C), stirring occasionally, until tender, for about 10 minutes. Transfer the cooked carrots to a large bowl while warm, add balsamic glaze and butter, toss to coat, sprinkle with chives, and serve.
