Cozy up with Alberta-style slow cooker beef barley stew for the ultimate comfort on chilly days.
Ingredients:
  • 6 cups hot water, divided
  • 2 beef bouillon cubes
  • 1 (1 ounce) package dry onion soup mix
  • 1 pound beef stew meat, cut into 1-inch cubes
  • 3 large potatoes, peeled and cut into 1-inch cubes
  • 0.5 large onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 tablespoons minced garlic
  • 1.5 cups pearl barley
Instructions:
  • In a microwave-safe bowl, heat 2 cups of water to boiling for about 2 minutes. Stir in beef bouillon cubes and onion soup mix until fully dissolved.
  • Add the bouillon mixture and 4 cups of water into a slow cooker set on High. Mix in the beef, potatoes, onion, carrots, celery, and garlic.
  • Simmer with the lid on until the potatoes are fork-tender, 4 1/2 to 5 hours. Add barley to the beef mixture and simmer until barley is tender, around 30 minutes more.
  • Turn off the slow cooker, uncover, and let it cool until slightly thickened, approximately 5 minutes.
