Authentic Alberta pioneer biscuits, made with fresh ingredients.
Ingredients:
  • 6 cups all-purpose flour
  • 0.5 cup nonfat dry milk powder
  • 0.25 cup white sugar
  • 0.25 cup baking powder
  • 2 teaspoons cream of tartar
  • 2 teaspoons salt
  • 2 cups shortening
  • 1.5 cups water, or as needed
Instructions:
  • Preheat the oven to 400°F (200°C) to get it nice and hot for baking.
  • In a large bowl, combine flour, dry milk powder, sugar, baking powder, cream of tartar, and salt. Use a knife or pastry blender to cut in shortening until mixture resembles coarse crumbs. Stir in water until a soft dough forms.
  • Transfer the dough onto a lightly floured surface and knead with floured hands until smooth (about 8 to 10 turns). Roll out the dough to 3/4-inch thickness using a floured rolling pin. Cut out biscuits with a 2 1/2-inch round cookie cutter and place them on a baking sheet. Gather any remaining dough trimmings, roll out, and cut out more rounds.
  • Place the biscuits in the preheated oven and bake until they turn a beautiful golden color, which will take approximately 20 minutes. Serve while still warm.
