Corn salad with tomatoes, green onion, olive oil, vinegar, and feta cheese - a tasty summer side dish.
Ingredients:
  • 3 ears sweet corn
  • 1.5 pints cherry tomatoes, halved lengthwise
  • 1 bunch green onions, diced
  • 2 tablespoons minced fresh cilantro
  • 2 tablespoons olive oil
  • 2 tablespoons aged white wine vinegar
  • 1 (4 ounce) package feta cheese, cubed
Instructions:
  • Heat ample water in a sizable pot until it boils. Submerge corn and cook for 10 minutes. Drain and cool under running water for easier handling.
  • Cut the corn off the cobs into a large bowl. Combine with tomatoes, green onions, cilantro, olive oil, vinegar, salt, and pepper. Sprinkle feta cheese just before serving.
