Colorful salad featuring fresh corn, green onions, and tomatoes, topped with basil ribbons and a creamy Parmesan dressing.
Ingredients:
  • 0.25 cup white sugar
  • 6 ears fresh corn, shucked and desilked
  • 2 Roma tomatoes, seeded and diced
  • 1 red bell pepper, minced
  • 1 bunch green onions, thinly sliced
  • 0.5 cup sour cream
  • 0.33333334326744 cup mayonnaise
  • 0.25 cup fresh basil leaves, cut into very thin strips
  • 0.25 cup shredded Parmesan cheese
  • 2 tablespoons cider vinegar
  • 1 teaspoon ground black pepper
Instructions:
  • Fill a bowl with ice water. In a large pot filled with water, stir in sugar and bring to a boil. Add corn and cook until softened, about 2 minutes. Drain and transfer corn to the ice water to cool. Drain again, then cut kernels from the cob with a sharp knife.
  • Mix corn, Roma tomatoes, red bell pepper, and green onions in a bowl. Blend together sour cream, mayonnaise, basil, Parmesan cheese, and cider vinegar in another bowl until you have a smooth dressing. Season with salt and pepper. Gently fold the dressing into the corn mixture. Refrigerate for 8 hours to overnight to let the flavors meld together.
