Delicious and refreshing corn salad, perfect with sweet corn anytime of the year.
Ingredients:
  • 8 slices bacon
  • 2 heads butterhead lettuce
  • 1 red bell pepper, chopped
  • 1 bunch green onions, chopped
  • 4 ears sweet corn, cut off the cob
  • 2 avocados - peeled, seeded and cubed
  • 0.66666668653488 cup red wine and vinegar salad dressing
  • 3 tablespoons blue cheese salad dressing
  • 2 tablespoons honey
Instructions:
  • Cook the bacon in a large, deep skillet over medium-high heat until beautifully browned. Remove, crumble, and set aside.
  • Combine the fresh lettuce, vibrant red bell pepper, crisp green onions, and golden corn in a large bowl. Gently fold in the creamy cubed avocado.
  • Combine the red wine and vinegar dressing, blue cheese dressing, and honey in a small bowl, and whisk together until well blended.
  • Drizzle the flavorful dressing over the vibrant salad and gently mix. Sprinkle crispy bacon on top right before serving for that extra crunch.
