Irresistible sweet and sticky pork ribs.
Ingredients:
  • 4cm piece fresh ginger, peeled, finely grated 4 garlic cloves, crushed
  • 750ml bottle ginger beer
  • 93.23 gm barbecue sauce
  • 59.40 gm brown sugar
  • 100.65 gm Worcestershire sauce
  • 82.50 ml apple cider vinegar
  • 1.5kg pork rib
  • Fresh coriander leaves, to serve
  • Lime halves, to serve
  • 1.20 gm garlic salt
  • 0.63 gm smoked paprika
  • 36.40 gm extra virgin olive oil
  • 4 corncobs, husks and silks removed
  • 1 small red capsicum, thickly sliced
  • 1 avocado, halved, sliced
  • 1/2 small red onion, thinly sliced
  • 42.00 gm lime juice
Instructions:
  • Mix together ginger, garlic, ginger beer, barbecue sauce, sugar, Worcestershire sauce, and vinegar in a large shallow glass or ceramic dish. Add the ribs and toss to coat them well. Cover and refrigerate for at least 4 hours, or ideally overnight, to allow the flavors to marinate.
  • 1. Preheat your oven to 180°C/160°C fan-forced. 2. Take the ribs out of the fridge and let them sit for 10 minutes. 3. Cover them tightly with foil and bake in the marinade for 2 hours and 30 minutes or until tender. 4. Remove ribs carefully from the marinade. 5. Transfer 2 cups of marinade to a small saucepan over medium-high heat. 6. Bring it to a boil, then reduce the heat to low and simmer for 20 minutes until it is reduced by half and thickened.
  • Preheat the barbecue chargrill to medium heat. In a large bowl, mix garlic salt, paprika, and 1 tablespoon of oil. Add the corn and coat it with the mixture. Grill the corn for 10 minutes, turning occasionally, until it is tender and has a slight char. Transfer the corn to a cutting board and carefully cut the kernels from the cobs into large chunks. In a bowl, combine the corn, capsicum, avocado, and onion. Drizzle lime juice and the remaining oil over the salad. Gently toss everything together until combined.
  • Place the ribs on the barbecue chargrill. Cook for 4 to 5 minutes on each side, brushing with marinade, until they are caramelized and slightly charred. Cut the ribs into portions and serve with a side of corn and avocado salad.
