Slow cooker ginger beer pulled pork: Sweet, spicy, and perfect for a family dinner.
Ingredients:
  • 2 sweet onions, peeled and quartered
  • 2 teaspoons kosher salt
  • 1.5 teaspoons dark brown sugar, or more to taste
  • 1.5 teaspoons smoked paprika
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder, or more to taste
  • 1 teaspoon red pepper flakes
  • 1 (6 pound) Boston pork butt roast
  • 13 fluid ounces ginger beer
Instructions:
  • Place a bed of onions at the base of the slow cooker.
  • Combine salt, brown sugar, paprika, black pepper, garlic powder, and red pepper flakes in a bowl, ensuring they are thoroughly mixed. Massage the spice mixture onto the pork roast, making sure to coat it evenly. Put the roast in the slow cooker, placing it fat-side up.
  • Slow cook for 1 hour on Low. Add ginger beer to the slow cooker and cook until the roast is tender and easily pulls apart with a fork, 9 to 11 hours.
