Create sweet and spicy homemade candied ginger with just 3 ingredients for a versatile dessert addition.
Ingredients:
  • 10 ounces fresh young ginger root, peeled
  • 2 cups white sugar
Instructions:
  • Cut the ginger into 2-inch pieces, then slice lengthwise into 1/8-inch slices. Score the ginger slices by pricking them with a fork.
  • Combine fresh ginger and sugar in a mixing bowl.
  • In a large skillet or wok, combine ginger-sugar mixture with water and bring to a simmer. Cook on low heat, stirring occasionally, until the sugar turns into syrup and starts to crystallize, which should take around 1 hour. Keep stirring until the syrup mostly crystallizes and the ginger forms a pile in the center with minimal syrup remaining. Remove from heat.
  • Gently stir ginger slices to separate from excess sugar. Arrange slices on a tray to cool and dry evenly.
