Spice up your cookies with crystallized ginger!
Ingredients:
  • 0.75 cup unsalted butter
  • 1 egg white
  • 2 tablespoons dark corn syrup
  • 3 tablespoons chopped crystallized ginger
  • 2 cups all-purpose flour
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cloves
  • 0.33333298563957 cup granulated sugar for decoration
  • 0.33333298563957 cup confectioners' sugar for decoration
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease 2 large cookie sheets.
  • Combine butter and sugar in a large bowl until creamy. Add egg white and corn syrup, mix until fluffy. Mix in crystallized ginger. In a separate bowl, sift flour, baking soda, salt, cinnamon, ground ginger, and cloves. Stir dry ingredients into the egg mixture. Use your hands to bring the dough together into a smooth dough.
  • Shape dough into 1-inch balls and coat in white sugar. Spread them out on a baking sheet, leaving 2 inches of space between each ball, then flatten them with a sugar-dipped glass. Bake in the preheated oven for 12 to 15 minutes until golden brown. Allow the cookies to cool on the baking sheet briefly before transferring to a cooling rack. Finish by dipping half of each cookie in confectioners' sugar for a decorative touch.
