Spiced cookies with allspice, cinnamon, and maple syrup - irresistibly soft, chewy, and flavorful.
Ingredients:
  • 4 ounces white sugar
  • 3 ounces light brown sugar
  • 4 ounces unsalted butter, softened
  • 1 eggs
  • 1 tablespoon maple syrup
  • 8 ounces self-rising flour
  • 1.25 teaspoons ground allspice
  • 0.25 teaspoon ground cinnamon
  • 4 ounces confectioners' sugar
  • 2 tablespoons maple syrup
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) while covering 2 baking sheets with parchment paper.
  • Cream together sugar, brown sugar, and butter in a bowl using an electric blender until fluffy. In a cup, gently beat the egg with maple syrup using a fork, then add it to the sugar-butter mixture and beat until combined.
  • Combine flour, allspice, and cinnamon in a bowl. Slowly incorporate into sugar-butter mixture, adding 2 tablespoons at a time, and beating thoroughly after each addition until fully combined.
  • Using your hands, shape 1 tablespoon of dough into a ball, place it on the baking sheet, lightly press it down with the palm of your hand to flatten slightly, and repeat with the rest of the dough, making sure to leave space between cookies.
  • Bake in the preheated oven until lightly golden, for 8 to 10 minutes. They may appear slightly underdone when finished, but avoid over-baking to ensure a soft cookie. Cool on a wire rack for about 30 minutes before serving.
  • Sift confectioners' sugar into a clean, dry bowl. Stir in maple syrup using a metal spoon. Adjust icing consistency by adding a few drops of warm water until it reaches your desired thickness. Drizzle or spread over cooled cookies.
