Description: Thick, chewy molasses spice cookies that taste like gingersnaps with a sweet, spiced flavor.
Ingredients:
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons of baking soda
  • 1/2 teaspoon of salt
  • 1 teaspoon ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground allspice
  • 3/4 teaspoon ground cloves
  • 3/4 cup (1 1/2 sticks) unsalted butter, softened
  • 1/2 cup dark brown sugar, packed
  • 1/2 cup granulated sugar, plus 1/3 cup for rolling cookies
  • 1 large egg
  • 1/3 cup molasses
Instructions:
  • In a bowl, vigorously whisk together flour, baking soda, salt, cinnamon, ginger, cloves, and allspice. Preheat the oven to 375°F. Set aside.
  • In a mixing bowl, cream together the butter and sugars until light and fluffy using an electric mixer for about 3 minutes. Add the egg, vanilla extract, and molasses, then beat for another 30 seconds until well combined. Be sure to scrape down the sides of the bowl with a rubber spatula for an even mixture.
  • Combine the dry ingredients with the wet ingredients, mixing at low speed until just incorporated, for about 30 seconds.
  • Roll the dough into 2 tablespoons sized balls, coat them in the remaining 1/3 cup of granulated sugar, and space them 1 1/2 to 2 inches apart on ungreased cookie sheets.
  • Bake: Place one baking sheet on the center rack in a preheated 375°F oven. Bake for 11 to 13 minutes until the edges set and the centers are soft and puffy. Cool the cookies on the sheet for 2 to 3 minutes before transferring to a cooling rack. Ensure a soft and spongy center by not overcooking.
