Delicious molasses spice cookies with cinnamon chips for extra flavor!
Ingredients:
  • 1.5 cups shortening
  • 2 cups white sugar
  • 2 tablespoons vanilla extract
  • 0.5 cup light molasses
  • 4 cups all-purpose flour
  • 4 teaspoons baking soda
  • 2 teaspoons salt
  • 2 teaspoons ground nutmeg
  • 2 teaspoons ground ginger
  • 1 (10 ounce) package HERSHEY®'S Cinnamon Chips
  • 1 cup white sugar for decoration
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • In a large bowl, combine shortening and 2 cups of sugar until smooth. Add eggs one at a time, followed by vanilla and molasses. In a separate bowl, mix flour, baking soda, salt, nutmeg, and ginger; gradually add to the sugar mixture. Stir in cinnamon chips. Roll the stiff dough into walnut-sized balls, coat each ball with sugar, then place on an ungreased cookie sheet 2 inches apart. Gently flatten before baking.
  • Bake in the preheated oven for 8 to 10 minutes until the tops crackle. Allow to cool on the baking sheet briefly before transferring to a wire rack to cool completely.
