Elevate your French toast with decadent cinnamon spice and caramelized banana, creating a gourmet breakfast classic.
Ingredients:
  • 3 eggs, lightly beaten
  • 128.75 gm milk
  • 63.13 gm cream
  • 4.40 gm vanilla essence
  • 12.00 gm icing sugar
  • 4 x 2.5cm-thick slices day-old brioche (see note)
  • 40.00 gm butter
  • 3 bananas, sliced lengthways
  • Pure maple syrup, to serve
Instructions:
  • In a large jug, mix together eggs, milk, cream, vanilla, icing sugar, and cinnamon using a fork until fully combined. Pour the mixture into a shallow ceramic dish.
  • Preheat the oven to 180°C. Dip the brioche slices in the milk mixture for 30 seconds to 1 minute per side until thoroughly soaked. Allow excess liquid to drip off. In a large frying pan, melt the 1 tablespoon of butter over medium heat until bubbling. Add the soaked brioche and cook for 1 to 2 minutes per side until golden. Transfer to a baking tray and keep warm in the oven. Repeat the process with the remaining butter and brioche slices.
  • Plate the French toast, arrange sliced bananas on top, generously drizzle with maple syrup, and serve.
