Spiced chocolate creme brulees

Indulge in irresistible spiced chocolate creme brulee - a perfect balance of spice and sweetness.
Ingredients:
  • 150g chilli chocolate, chopped
  • 505.00 gm thickened cream
  • 6 egg yolks
  • 53.75 gm caster sugar
  • 2.50 gm ground cinnamon
  • 1/2 tsp allspice
  • 30.00 gm caster sugar
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. In a saucepan over medium heat, melt chocolate with cream, stirring constantly until smooth, about 4 to 5 minutes. Allow the mixture to cool for 5 minutes.
  • In a mixing bowl, whisk egg yolks, caster sugar, cinnamon, and allspice with an electric mixer until thick and pale, about 2 to 3 minutes. Slowly add the chocolate mixture and whisk until combined. Strain the mixture through a fine sieve into a jug.
  • Evenly distribute mixture among six 1/2 cup-capacity ovenproof dishes. Arrange in a large roasting pan. Add boiling water into the pan until it reaches halfway up the sides of the dishes. Bake for 20 to 30 minutes until edges are firm and centers jiggle slightly when touched. Gently remove dishes from water. Let cool, cover with plastic wrap, and refrigerate overnight.
  • Preheat the grill on high heat. Sprinkle 1 teaspoon of sugar over the top of each dish and place them in a flameproof roasting pan. Arrange ice cubes around the dishes. Grill the custards for 5 minutes or until the sugar caramelizes. Serve and enjoy.
