Decadent banana cookie bars with chocolate chips, rum, vanilla, and warm spices. Rich and moist.
Ingredients:
  • 1.5 cups white sugar
  • 1 cup sour cream
  • 0.75 cup butter, melted
  • 2 eggs
  • 1.5 cups mashed banana
  • 2 teaspoons vanilla extract
  • 0.5 teaspoon rum flavoring
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground nutmeg
  • 1 cup chocolate chips
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C), then prepare a 9x13-inch baking pan by greasing and flouring it.
  • Using an electric mixer on low speed, blend sugar, sour cream, butter, and eggs in a large bowl for 2 to 3 minutes. Scrape the bowl, then incorporate bananas, vanilla extract, and rum flavoring; mix until well combined.
  • In a bowl, mix flour, salt, baking soda, cinnamon, ginger, and nutmeg until well combined. Slowly add the flour mixture to the banana mixture and beat on medium speed for 1 to 2 minutes. Gently fold in chocolate chips, then spread the batter into the prepared pan.
  • Bake in the oven until a toothpick inserted in the center comes out clean, around 20-25 minutes. Allow to cool completely before cutting into bars.
