Deliciously spiced chocolate-pumpkin chip cookies with a twist for the perfect fall treat.
Ingredients:
  • 1 cup white sugar
  • 0.75 cup butter, softened
  • 1 large egg
  • 1 cup all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1.25 cups pumpkin spice baking morsels (such as Nestle® Toll House®)
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Cream sugar and butter in a large bowl until smooth using a rubber spatula. Mix in the egg until thoroughly combined.
  • In a separate bowl, whisk together flour, cocoa powder, salt, and baking soda. Gradually add this mixture to the sugar mixture, beating well after each addition. Stir in vanilla and almond extracts until evenly incorporated.
  • Gently incorporate the pumpkin chips into the dough. Place teaspoon-sized scoops of dough on an ungreased cookie sheet. Optionally, add a few extra pumpkin chips on top for a more pronounced look after baking.
  • Bake until soft and chewy with golden edges in preheated oven for approximately 7 minutes. Then, place on a cooling rack.
