Sheet Pan Pancakes: Perfect crowd-pleasing brunch with sliced bananas, walnuts, and maple syrup.
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 1/2 cup sugar
  • 4 teaspoons baking powder
  • 2 eggs, slightly beaten
  • 2 cups milk
  • 1/2 cup butter, melted
  • 1/2 cup mashed ripe banana (1 medium)
  • 1/2 cup miniature chocolate chips
  • 3 firm medium bananas, cut into 1/4-inch slices (about 3 cups)
  • 1/2 cup chopped walnuts
  • 1/4 cup real maple syrup
Instructions:
  • Preheat oven to 400°F. Line a 15x10x1-inch pan with foil and spray it with cooking spray.
  • Combine flour, sugar, baking powder, and salt in a large bowl; mix until blended and set aside.
  • In a medium bowl, whisk together eggs, milk, melted butter, vanilla, and 1/2 cup mashed banana until smooth. Gently fold the egg mixture into the flour mixture until just combined (don't overmix, it's okay if there are lumps). Transfer the batter to the pan and sprinkle chocolate chips on top.
  • Bake for 20-24 minutes until golden brown and the center is set. Check doneness by inserting a toothpick into the center - it should come out clean. Allow to cool on a rack for 10 minutes. Add your favorite toppings and if desired, drizzle with more maple syrup before serving.
