Prepare and freeze banana bread slices for up to 3 months. Pop them in lunch boxes straight from the freezer for a delightful kids' snack.
Ingredients:
  • 300g self-raising flour
  • 220g brown sugar
  • 2 over-ripe bananas, mashed
  • 2 Free Range Eggs, lightly whisked
  • 150g butter, melted
  • 125ml buttermilk
  • 135g chocolate chips
Instructions:
  • Preheat your oven to 180°C. Grease a 10cm x 22cm loaf pan and line it with baking paper, leaving the sides to overhang.
  • Combine flour and sugar in a large bowl. In a separate bowl, whisk together banana, egg, butter, and buttermilk. Add banana mixture and chocolate chips to the flour mixture and stir until combined. Pour batter into the prepared pan.
  • Bake the banana bread for 1 hour or until a skewer inserted in the center comes out clean. Let it cool in the pan for 5 minutes before transferring it to a wire rack to cool completely. Slice and serve.
