Chunky white choc chip & pecan cookies

Delicious pecan cookies with white chocolate chips - ideal for pairing with tea or warm milk.
Ingredients:
  • 125g butter, room temperature
  • 180.00 gm brown sugar
  • 4.40 gm vanilla essence
  • 41.20 gm milk
  • 187.50 ml plain flour
  • 75.00 gm self-raising flour
  • 95.00 gm white choc bits
  • 125.00 ml pecan nuts, roughly chopped
  • 1 egg
Instructions:
  • Preheat oven to 170C (150C fan) and line 2 baking trays with non-stick baking paper. In a large mixing bowl, use electric beaters to blend butter, sugar, and vanilla until light and creamy. Mix in the egg and milk thoroughly.
  • Sift both flours over the bowl, then gently mix them in with a knife. Add the chocolate bits and pecans, and use your clean hands to combine everything thoroughly.
  • Scoop generous spoonfuls of cookie dough and shape into balls. Arrange on baking trays and gently press down. Bake for 20 minutes until edges turn golden. Allow to cool on trays for 5 minutes before transferring to a wire rack.
