Elevate classic shortbread with added white chocolate for a delightful treat.
Ingredients:
  • 250g unsalted butter, chopped
  • 150.00 gm pure icing sugar
  • 375.00 ml plain flour
  • 1/2 rice flour
  • 180g Belgian white chocolate, chopped
Instructions:
  • Preheat your oven to 160C (or 140C for fan-forced). Lightly grease a 12cm x 35cm fluted, loose-base flan pan.
  • Combine all ingredients in a food processor, except for the chocolate. Process until a cohesive ball forms around the blade. Transfer the mixture onto a lightly floured surface, sprinkle chocolate over the dough, and gently knead to incorporate.
  • Transfer the dough to the pan and shape it evenly. Cut the dough into 9 fingers, bake for 35-40 minutes until lightly golden, and let it cool in the pan. Cut into pieces and serve.
