Indulge in irresistible chewy cookies loaded with dark and white chocolate chips.
Ingredients:
  • 125g unsalted butter, softened
  • 250g brown sugar
  • 4.40 gm vanilla extract
  • 225g plain flour
  • 2.00 gm baking powder
  • 100g Baking Dark Chocolate, roughly chopped
  • 100g Baking White Chocolate, roughly chopped
Instructions:
  • Preheat the oven to 180C and line a baking tray with parchment paper.
  • Combine butter and brown sugar in a bowl. Use electric beaters to mix until thick and pale. Add vanilla extract and egg, beat briefly. Gently sift in flour, baking powder, and a pinch of salt, then fold together. Add dark and white chocolate chunks, stir to incorporate.
  • Spoon dollops of the mixture onto the tray, leaving 4-5cm of space between each. Bake until golden, for about 15-20 minutes.
  • Allow the cookies to cool on the tray for 5 minutes, then transfer them to a wire rack to cool completely.
  • Keep cookies fresh by storing them in a sealed container for 2-3 days.
