Choc chip cookie slice recipe

Indulgent double milk chocolate chip slab cookie, simple to make in a pan - no rolling dough needed!
Ingredients:
  • 125g butter, chopped
  • 155g (3 ⁄4 cup, firmly packed) brown sugar
  • 4.40 gm vanilla extract
  • 190g (11 ⁄4 cups) plain flour
  • 3 ⁄12.00 gm baking powder
  • 100g (1 ⁄2 cup) milk choc chips
  • 156g packet Cookies Choc Centre
Instructions:
  • - Preheat your oven to 160C (140C for fan forced). - Grease a 16.5 x 26.5cm slice pan and line it with baking paper, leaving the paper to hang over the longer sides.
  • In a small saucepan over medium heat, melt the butter. Once melted, stir in the sugar until dissolved. Transfer the mixture to a bowl to cool slightly. Add the egg and vanilla to the bowl and whisk until combined. Sift in the flour and baking powder, then stir until combined. Finally, mix in half of the chocolate chips until evenly distributed.
  • Layer half of the mixture on the bottom of the pan. Place cookies on top. Add the rest of the mixture over the cookies. Sprinkle with remaining chocolate chips, gently press them into the dough. Bake until edges turn golden, about 20 minutes. Let cool in the pan, then cut into bars to enjoy.
