Elevate the classic choc-chip cookie with rich dark chocolate, a sprinkle of salt, and hint of cinnamon for a delightful twist!
Ingredients:
  • 250g butter, softened
  • 107.50 gm caster sugar
  • 59.40 gm brown sugar
  • 4.40 gm vanilla extract
  • 1 egg
  • 500.00 ml plain flour
  • 5.00 gm ground cinnamon
  • 2.00 gm baking powder
  • 0.63 gm bicarbonate of soda
  • 300g dark chocolate, chopped
  • 1.20 gm sea salt flakes
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 20cm x 30cm lamington pan and line with baking paper, making sure to have the paper extend 2cm above all sides.
  • With an electric mixer, whip together butter, sugars, and vanilla until light and fluffy, about 5 minutes. Incorporate the egg and continue beating until combined. Add flour, cinnamon, baking powder, and bicarbonate of soda, then beat for 1 minute until well combined. Finally, gently fold in the chocolate.
  • Smooth mixture into pan using the back of a spoon to create an even surface. Sprinkle with sea salt. Bake for 25 to 30 minutes until golden and slightly firm. Allow to cool in the pan until just warm, then cut into bars and serve.
