Traditional German spiced cookie recipe with molasses, cinnamon, nutmeg, cloves, honey, and brown sugar - a festive treat that brings the magic of Christmastime in Germany to your kitchen.
Ingredients:
  • 0.5 cup honey
  • 0.5 cup molasses
  • 0.75 cup packed brown sugar
  • 1 egg
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 2.75 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground allspice
  • 1 teaspoon ground nutmeg
  • 0.33300000429153 cup diced candied citron
  • 0.33300000429153 cup chopped hazelnuts
  • 1 cup white sugar
Instructions:
  • Combine honey and molasses in a saucepan and bring to a boil. Remove from heat and mix in brown sugar, egg, lemon juice, and lemon zest. In a large bowl, combine flour, baking soda, cinnamon, cloves, allspice, and nutmeg. Add molasses mixture to dry ingredients and mix. Fold in citron and hazelnuts. Chill dough overnight.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets. Roll out small portions of dough on a lightly floured surface to 1/4 inch thickness. Cut into small rectangles and arrange them 1 inch apart on the cookie sheet.
  • Bake in the preheated oven for 10 to 12 minutes until lightly touched cookies have no imprints. While hot, brush icing over and swiftly transfer to wire racks. Store with a cup of orange or apple in an airtight container for a few days to enhance flavors.
  • Prepare the icing by combining the sugar and water in a small saucepan and heating it to between 234 and 240 degrees F (112 to 116 degrees C) until a soft ball forms in cold water. Remove from heat and stir in the confectioners' sugar. If the icing becomes sugary while brushing the cookies, heat it slightly and add a little water until the crystals dissolve.
