Vintage Christmas bars with a zesty frosting. Let the dough mature for optimal flavor.
Ingredients:
  • 1.25 cups white sugar
  • 0.75 cup honey
  • 2 tablespoons water
  • 2 cups semisweet chocolate chips
  • 1 cup chopped almonds
  • 0.5 cup candied mixed fruit, chopped
  • 2 eggs, beaten
  • 0.25 cup orange juice
  • 2.75 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 2 teaspoons ground cardamom
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1.5 cups confectioners' sugar
  • 2.5 tablespoons orange juice
  • 0.25 cup green decorator sugar
  • 0.25 cup cinnamon red hot candies
Instructions:
  • In a large saucepan, mix sugar, honey, and water. Boil until rolling, then let it cool. In a medium bowl, combine the honey mixture with chocolate chips, almonds, candied fruit, eggs, and orange juice. Sift together flour, cinnamon, cloves, cardamom, baking soda, and baking powder; mix into the fruit and nut mixture. Cover tightly, refrigerate for 2-3 days to meld flavors.
  • Preheat your oven to a toasty 325 degrees F (165 degrees C). Be generous and grease and flour a 10x15 inch jellyroll pan. Spread the dough evenly into the pampered pan.
  • Bake in the preheated oven for 35 to 40 minutes until golden brown. Once cooled, generously frost with the vibrant orange frosting.
  • Prepare the orange frosting by combining confectioners' sugar in a small bowl and gradually mixing in orange juice until it reaches the perfect consistency. Smooth over the cooled bars, slice them into diamonds, then decorate with cinnamon candies and a sprinkle of green sugar.
