Festive twist on classic tiramisu with creamy mascarpone & ricotta, no raw eggs.
Ingredients:
  • 200 ml double cream
  • 100 g quality dark chocolate (70%) plus extra to serve
  • 100 g sponge fingers
  • 150 ml good hot strong sweetened coffee
  • 50 ml Vin Santo or sweet sherry
  • 500 g ricotta cheese
  • 250 g mascarpone cheese
  • 1 teaspoon vanilla bean paste
  • 3 tablespoons runny honey
  • 1 orange or clementine
Instructions:
  • Prepare the ganache by simmering cream in a pan over medium heat. Add a pinch of sea salt and melt chocolate into the cream until smooth. Set aside. Place sponge fingers in a dish, pour hot sweetened coffee and drizzle Vin Santo over them. Spread the ganache on top. Blend ricotta, mascarpone, vanilla bean paste, and honey until smooth, then spread over the chocolate layer. Chill in the fridge for at least 2 hours. Serve with grated chocolate and orange zest. Enjoy this heavenly dessert.
