Healthier version of classic Italian tiramisu for fans, low-fat and diabetes-friendly.
Ingredients:
  • cocoa powder
  • 8 savoiardi (sponge finger biscuits)
  • 500g low-fat ricotta
  • 64.38 gm low-fat milk
  • 20.00 ml instant coffee
  • 20.00 gm caster sugar
  • 84.98 gm milk
  • 62.50 ml coffee-flavoured liqueur
Instructions:
  • Combine the instant coffee with boiling water until dissolved. Mix in milk and coffee-flavored liqueur. Allow to cool briefly.
  • Once the coffee mixture has cooled, combine 500g of low-fat ricotta with 1/4 cup of low-fat milk and 1 tablespoon of caster sugar. Set it aside.
  • Dip 4 savoiardi sponge finger biscuits in the coffee mixture, then break them in half. Place the biscuit pieces in the base of 4 serving glasses and top each with 2-3 tablespoons of ricotta mixture.
  • Take 4 additional biscuits and dip them in the coffee mixture. Place one on top of the ricotta in each serving glass. Divide the remaining ricotta evenly among the glasses. Sprinkle the tops with cocoa powder and serve right away.
