Indulgent Tiramisu with rich milk chocolate topping - a guaranteed hit!
Ingredients:
  • 375.00 gm boiling water
  • 30.00 ml instant espresso coffee powder
  • 187.50 ml marsala (see note)
  • 112.50 gm icing sugar mixture
  • 500g mascarpone cheese
  • 20 sponge finger biscuits
  • Grated milk chocolate, to serve
Instructions:
  • Mix together water, coffee powder, and Marsala in a heatproof bowl.
  • With an electric mixer, whisk eggs and icing sugar for 5 minutes until they're thick and creamy. Add mascarpone and mix on low speed until just combined, being careful not to overmix.
  • Take each sponge finger and dip them individually in the coffee mixture. Lay them over the base of a 5cm-deep, 28cm x 20cm (base) 12 cup-capacity dish, cutting to fit as needed. Spread half of the mascarpone mixture over the sponge layer. Repeat the process with the remaining sponge fingers, coffee mixture, and mascarpone mixture. Cover the dish and refrigerate overnight. When ready to serve, top with grated chocolate.
