Classic Italian dessert made with coffee-soaked ladyfingers, mascarpone cream, and whipped cream.
Ingredients:
  • 6 large egg yolks
  • 0.75 cup white sugar
  • 0.66666668653488 cup milk
  • 1.25 cups heavy cream
  • 0.5 teaspoon vanilla extract
  • 1 pound mascarpone cheese, at room temperature
  • 0.25 cup strong brewed coffee, at room temperature
  • 2 tablespoons rum
  • 2 (3 ounce) packages ladyfinger cookies
  • 1 tablespoon unsweetened cocoa powder
Instructions:
  • Combine the egg yolks and sugar in a medium saucepan, whisking until fully blended.
  • Stirring constantly, cook the mixture over medium heat until it comes to a boil after whisking in the milk.
  • Simmer for 1 minute, then let it cool off the heat for a bit.
  • Chill covered in the fridge for 1 hour.
  • Using an electric mixer, whip cream and vanilla in a medium bowl until stiff peaks form.
  • Take out the chilled egg yolk mixture from the refrigerator and blend in the mascarpone cheese until silky smooth.
  • Mix coffee and rum in a small bowl. Slice ladyfingers in half lengthwise and coat them with the coffee mixture. Place half of the soaked ladyfingers at the bottom of a 7x11-inch dish.
  • Layer 1/2 of the mascarpone mixture onto the ladyfingers, followed by 1/2 of the whipped cream. Repeat for another layer.
  • Dust the top with cocoa powder.
  • Chill in the fridge until firm, for 4 to 6 hours.
  • Indulge and savor every delicious bite!
