Classic Italian dessert made with coffee-soaked ladyfingers, mascarpone cream, and whipped cream.
Ingredients:
6 large egg yolks
0.75 cupwhite sugar
0.66666668653488 cupmilk
1.25 cups heavy cream
0.5 teaspoonvanilla extract
1poundmascarpone cheese, at room temperature
0.25 cupstrong brewed coffee, at room temperature
2tablespoons rum
2 (3 ounce) packagesladyfinger cookies
1tablespoonunsweetened cocoa powder
Instructions:
Combine the egg yolks and sugar in a medium saucepan, whisking until fully blended.
Stirring constantly, cook the mixture over medium heat until it comes to a boil after whisking in the milk.
Simmer for 1 minute, then let it cool off the heat for a bit.
Chill covered in the fridge for 1 hour.
Using an electric mixer, whip cream and vanilla in a medium bowl until stiff peaks form.
Take out the chilled egg yolk mixture from the refrigerator and blend in the mascarpone cheese until silky smooth.
Mix coffee and rum in a small bowl. Slice ladyfingers in half lengthwise and coat them with the coffee mixture. Place half of the soaked ladyfingers at the bottom of a 7x11-inch dish.
Layer 1/2 of the mascarpone mixture onto the ladyfingers, followed by 1/2 of the whipped cream. Repeat for another layer.
