Almond-stuffed chocolate dates

Dates, sweet like caramel, pair perfectly with a rich dark chocolate coating for a Middle Eastern-inspired treat.
Ingredients:
  • 150 g quality dark chocolate (70%)
  • 20 large dates
  • 60 g marzipan optional
  • 20 whole blanched almonds
Instructions:
  • Begin by breaking the chocolate into pieces and placing them in a glass bowl set over a small pan of simmering water, ensuring the bottom of the bowl doesn't touch the water. Stir the chocolate until fully melted, then remove from the heat. Make a slit down the side of each date to remove the stone. Wrap each almond in a bit of softened marzipan, then stuff one almond into each date. Dip the stuffed dates one by one into the melted chocolate to coat, and place them on a sheet of greaseproof paper to set.
