German gingerbread cookies with molasses, spices, and a sweet glaze - a must-have festive Christmas delight.
Ingredients:
  • 0.75 cup brown sugar
  • 0.5 cup honey
  • 1 egg
  • 0.5 cup dark molasses
  • 3 cups sifted all-purpose flour
  • 1.25 teaspoons ground nutmeg
  • 1.25 teaspoons ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground allspice
  • 0.5 teaspoon baking soda
  • 0.5 cup slivered almonds
  • 0.5 cup candied mixed fruit peel, finely chopped
  • 1 egg white, beaten
  • 1 tablespoon lemon juice
  • 0.5 teaspoon lemon zest
  • 1.5 cups sifted confectioners' sugar
Instructions:
  • In a large bowl, use an electric mixer to blend brown sugar, honey, and egg until smooth. Mix in molasses. In a separate bowl, combine flour, nutmeg, cinnamon, cloves, allspice, and baking soda; stir into the molasses mixture to make a sticky dough. Fold in almonds and candied fruit peel. Cover the dough and refrigerate overnight.
  • Preheat the oven to 400 degrees F (200 degrees C) and prepare the cookie sheets by greasing or lining them.
  • On a lightly floured surface, roll out the dough to 1/4 inch thickness. Cut it into 2x3-inch rectangles and place them 1 1/2 inches apart on the prepared cookie sheets.
  • Place in the preheated oven and bake until golden brown, approximately 10-12 minutes.
  • As the cookies bake, prepare the glaze: Combine egg white, lemon juice, and lemon zest in a small bowl. Stir in confectioners' sugar until the mixture is smooth. Brush the warm cookies with the glaze.
  • Place the cookies on a wire rack to cool completely until they have set, then store them in airtight containers in a single layer.
