Famous German Christmas cookies, gluten-free and dairy-free lebkuchen.
Ingredients:
  • 25 backoblaten (German baking wafers)
  • 2 cups blanched almond flour
  • 1.25 cups white sugar
  • 0.5 cup ground hazelnuts
  • 7 tablespoons finely chopped candied lemon and orange peel
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla sugar
  • 1 pinch ground cloves
  • 2 cups chopped dark chocolate
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Place backoblaten (German baking wafers) on a parchment paper-lined baking sheet, ensuring a 1-inch space between each one.
  • Mix together almond flour, sugar, eggs, ground hazelnuts, candied lemon and orange peel, ground cinnamon, vanilla sugar, and ground cloves until a firm dough forms.
  • Form mixture into balls and place them on the prepared wafers. Gently press down to flatten into 1/2-inch-high rounds.
  • Bake until golden brown, approximately 15 to 20 minutes. Allow to cool fully for about 30 minutes.
  • Melt chocolate in a double boiler until smooth, stirring occasionally for about 5 minutes. Drizzle the melted chocolate over each lebkuchen.
