Elevate your German potato salad with the savory goodness of bacon and a delightful balance of tangy vinegar and sweet sugar in the dressing.
Ingredients:
  • 3 cups diced peeled potatoes
  • 4 slices bacon
  • 1 small onion, diced
  • 0.25 cup white vinegar
  • 2 tablespoons water
  • 1.5 tablespoons white sugar, or more to taste
  • 1 teaspoon salt
  • 0.125 teaspoon ground black pepper
  • 1 tablespoon chopped fresh parsley
Instructions:
  • In a large pot, cover the potatoes with water by 1 to 2 inches and bring to a boil. Cook until easily pierced with a fork, approximately 10 minutes. Drain and let cool.
  • Cook the bacon in a large skillet over medium-high heat until crispy, about 10-12 minutes. Once done, transfer the bacon to a paper towel-lined plate to cool, then crumble it. Keep the bacon grease in the skillet.
  • Sauté onions in the flavorful bacon grease until golden, around 6 to 8 minutes, then mix in vinegar, sugar, water, salt, and pepper and bring to a boil.
  • Once the water is bubbling vigorously, gently introduce the potatoes and half of the scrumptious crumbled bacon. Cook until everything is heated through, which should take about 3 to 4 minutes.
  • Transfer the warm potato salad to a serving dish, sprinkle the remaining bacon on top, garnish with parsley, and serve immediately.
