German Christmas spice cookies, perfect as edible gift tags.
Ingredients:
  • 50g unsalted butter
  • 60g (1/3 cup, lightly packed) brown sugar
  • 60ml (1/4 cup) treacle
  • 1 egg
  • 265g (1 3/4 cups) plain flour
  • 1.00 gm baking powder
  • 2.50 gm ground ginger
  • 2.50 gm ground cinnamon
  • Large pinch of ground cloves
  • Large pinch of ground nutmeg
  • 1 egg white
  • 230g (1 1/2 cups) pure icing sugar
Instructions:
  • In a small saucepan, gently melt butter with sugar and treacle over low heat. Stir until butter melts and sugar dissolves, about 3-5 minutes. Let cool for 10 minutes, then transfer to a large bowl.
  • Combine the egg with the butter mixture, then gently stir in the flour, baking powder, ginger, cinnamon, cloves, and nutmeg until well combined. Knead the dough on a lightly floured surface until smooth, shape it into a disc, cover with plastic wrap, and refrigerate for 1 hour.
  • Preheat your oven to 180°C. Line 2 baking trays with non-stick baking paper. Divide the dough into 2 portions. Roll out one portion on a lightly floured surface to a 5mm thickness. Use a 7cm star-shaped cutter to cut out stars from the dough. Transfer them onto the prepared trays. Bake for 5-7 minutes until golden. Let them cool on the trays for 5 minutes before moving them to a wire rack to cool completely. Repeat the process with the remaining dough.
  • In a bowl, whisk the egg white with a fork until foamy. Add the icing sugar and stir until smooth. Transfer the mixture to a piping bag fitted with a 2-3mm plain nozzle. Decorate the biscuits by piping the mixture onto them. Allow to set.
