Giant choc chip cookie recipe

Whip up a giant cookie in just 10 minutes for an impressive afternoon treat.
Ingredients:
  • 300g (2 cups) plain flour
  • 1.88 gm bicarbonate of soda
  • 1.80 gm salt
  • 125g unsalted butter, softened
  • 155g (3/4 cup firmly packed) brown sugar
  • 70g (1/3 cup) caster sugar
  • 6.60 gm vanilla extract
  • 1 egg yolk
  • 80ml (1/3 cup) cup thickened cream
  • 230g (1 1/4 cups) milk choc chips or dark choc chips
  • Chocolate ganache, to decorate
  • Sprinkles, to decorate
Instructions:
  • 1. Preheat your oven to 180C (160C fan forced). 2. In a bowl, whisk together the flour, bicarbonate of soda, and salt. 3. In another bowl, use electric beaters to cream together the butter, brown sugar, and caster sugar until pale and creamy. 4. Beat in the vanilla extract, egg, and egg yolk. 5. With the beaters on low speed, gradually add the flour mixture in 2 batches, alternating with the cream, until combined. 6. Gently stir in the chocolate chips.
  • Pour half of the batter onto the center of a 20cm round baking tray lined with baking paper. Spread evenly and bake for 8-10 minutes until the edges are golden. Remove from oven, press a spatula gently around the edge to create a neat round shape. Bake for an additional 7-8 minutes until golden brown. Allow it to cool slightly on the tray before transferring to a wire rack to cool completely. Repeat with the remaining mixture.
  • After the cookie has fully cooled, adorn it with piped chocolate ganache and a sprinkle of colorful sprinkles.
