Giant cookie with warm Baileys sauce - a hit for all ages!
Ingredients:
  • 120g butter, softened
  • 90.00 gm dark brown sugar
  • 1 egg
  • 80.00 ml Irish cream liqueur
  • 582.50 ml plain flour
  • 2.50 gm bicarbonate of soda
  • 75g dark chocolate, roughly chopped
  • 82.50 ml milk choc chip
  • Vanilla ice-cream, to serve
  • 126.25 gm thickened cream
  • 100g dark chocolate, chopped
Instructions:
  • Preheat your oven to 180C/160C fan-forced, then grease a 22cm round springform cake pan and line the base and sides with baking paper.
  • With an electric mixer, whip up a fluffy mixture by combining butter and sugars. Introduce egg and Baileys, mixing until well combined. Slowly add sifted flour and bicarbonate of soda, stirring until just combined. Gently fold in chocolate. Press the mixture into the pan evenly. Bake for 35 minutes until golden brown. Let cool in the pan for 10 minutes.
  • While you wait, prepare the Baileys Chocolate Sauce. Heat cream in a small saucepan until simmering over medium-high heat. Take off the heat, then stir in the chocolate and let it sit for 5 minutes. Whisk until smooth, then add the Baileys and whisk until smooth again. Keep covered to stay warm. Serve by drizzling warm cookies with the sauce and topping with ice cream.
