Giant chunky choc-chip cookies

Delicious yet untested member recipe.
Ingredients:
  • 625.00 ml plain flour
  • 450.00 gm brown sugar
  • 625.00 ml chocolate chips
  • 250g unsalted butter, softened
  • 2 large eggs
  • Few drops of vanilla essence
Instructions:
  • Preheat the oven to 180C, then generously grease and line the cookie sheets with baking paper.
  • Mix flour and chocolate chips together in a large bowl.
  • In a separate bowl, use a hand-held beater to cream together the butter and brown sugar until the sugar is mostly dissolved and the mixture lightens slightly in color and becomes creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla until it becomes fluffy and turns a coffee color.
  • Combine the butter mixture with the flour and chocolate chips using your hands until just combined, being careful not to overmix. Use a dessert spoon or soup spoon to scoop and heap the sticky mixture onto the cookie sheets, allowing space for up to 6 spoonfuls on each tray.
  • Bake in the oven for 8-10 minutes or until lightly browned on top, checking frequently as they may cook quickly towards the end.
  • Allow the cookies to cool on the tray for approximately 1 minute, then use a spatula to transfer them to a wire rack to finish cooling.
