Choc-chip cookie mash-up recipe

Delicious choc-chip cookies, ideal for tea time.
Ingredients:
  • 250g butter, softened
  • 180.00 gm firmly packed brown sugar
  • 215.00 gm caster sugar
  • 665.00 ml plain flour
  • 2.50 gm bicarbonate of soda
  • 1.20 gm salt
  • 165.00 ml dark chocolate chips
  • 20.00 gm cocoa powder
  • 165.00 ml white chocolate chips
Instructions:
  • Preheat your oven to 180C/160C fan-forced and line 2 large baking trays with baking paper.
  • With an electric mixer, whip together the butter and sugars until they are thick and pale. Mix in the eggs and vanilla until well combined. Sift in 2 1/2 cups of flour, bicarbonate of soda, and salt, then gently stir to combine everything.
  • Divide the mixture in half into two bowls. To one bowl, add the remaining flour and dark chocolate chips, then stir until combined. To the other bowl, add the cocoa powder and white chocolate chips, then stir until combined. Refrigerate both bowls for 30 minutes or until the mixtures firm slightly.
  • Take 1 level tablespoon of dough at a time, roll into balls, and place on 2 large plates. Create a large ball by pressing 1 vanilla dough ball and 1 chocolate dough ball together (avoid rolling to keep flavors separate). Repeat with remaining dough balls.
  • Take half of the dough balls and arrange them on the baking trays, ensuring there is 5cm of space between each for spreading. Gently press down on each with the palm of your hand. Bake in the oven for 15 minutes or until they turn golden brown. Let them rest on the trays for 5 minutes to cool slightly, then transfer them to a wire rack to cool completely. Repeat with the rest of the dough balls. Serve and enjoy!
