Ginger-Brown Sugar Cookies

Spice up classic ginger cookies with extra kick from crystallized ginger.
Ingredients:
  • 1 cup packed brown sugar
  • 3/4 cup butter or margarine, softened
  • 1 teaspoon vanilla
  • 1 egg
  • 2 cups Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground ginger
  • 1/2 cup finely chopped crystallized ginger
  • 2 tablespoons granulated sugar
Instructions:
  • Preheat the oven to 375°F. In a large bowl, cream together brown sugar, butter, vanilla, and egg using an electric mixer or a spoon. Mix in the flour, baking soda, and ginger.
  • Form dough into 1-inch balls and arrange them 2 inches apart on an ungreased cookie sheet. Flatten to 1/2-inch thickness using the bottom of a greased glass dipped in granulated sugar.
  • Bake cookies for 8 to 10 minutes, until edges are set. Remove from cookie sheet and cool on wire rack.
