Ginger brown sugar bar cookies: Chewy like brownies, ready in 1 hour with simple pantry staples.
Ingredients:
  • 1.75 cups brown sugar
  • 0.66666668653488 cup butter
  • 0.25 cup molasses
  • 2 teaspoons ground ginger
  • 2 teaspoons vanilla extract
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 1 teaspoon salt
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking pan.
  • Cream together brown sugar, butter, and molasses until smooth. Add ginger, eggs, and vanilla. In a separate bowl, mix all-purpose flour, whole wheat flour, baking powder, baking soda, and salt. Gradually stir in 1/4 of the flour mixture at a time into the butter mixture. Pour batter into the baking pan.
  • Bake until a toothpick comes out clean, about 25-30 minutes in the preheated oven. Allow to cool before slicing.
