Indulge in delicious ginger cookies for your cookie jar.
Ingredients:
  • 170g butter, softened
  • 225.00 gm firmly packed brown sugar
  • 83.75 gm golden syrup
  • 500.00 ml plain flour
  • 5.00 gm bicarbonate of soda
  • 5.00 gm ground ginger
  • 2.50 gm ground cinnamon
  • 53.75 gm raw caster sugar
  • 40.00 ml sliced glace ginger
Instructions:
  • Preheat your oven to 170C/150C fan-forced, then prepare 2 large baking trays by lining them with baking paper.
  • 1. In an electric mixer, whip together butter and sugar until creamy and airy. Mix in the egg and golden syrup until well blended. Next, sift flour, bicarbonate of soda, ginger, and cinnamon over the butter mixture. Finally, use a wooden spoon to stir until a soft dough comes together.
  • Spread raw caster sugar in a shallow dish. Shape level tablespoons of mixture into balls and coat them evenly with sugar. Arrange the balls on prepared trays, leaving 5cm of space between each to allow for spreading.
  • Gently press the palm of your hand on each cookie to slightly flatten it. Place 1 piece of ginger on top of each cookie. Bake for 15 to 18 minutes, switching trays halfway, until they turn light golden. Let them cool on the trays for 5 minutes, then transfer to a wire rack to cool completely. Serve and enjoy.
