Ginger Cookies from Stevia In The Raw

Spiced ginger cookies that are sure to steal the spotlight on any dessert platter.
Ingredients:
  • 2 cups all-purpose flour
  • 0.75 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 0.5 teaspoon ground Saigon cinnamon
  • 0.125 teaspoon ground cloves
  • 0.5 cup butter
  • 0.33333334326744 cup Stevia In The Raw® Bakers Bag
  • 0.25 cup Sugar In The Raw®
  • 1 eggs
  • 0.25 cup Karo® Dark Corn Syrup
  • 0.33333334326744 cup Sugar In The Raw®, or as needed
Instructions:
  • Preheat your oven to 350°F.
  • In a medium bowl, mix together flour, baking soda, salt, ginger, cinnamon, and cloves; set aside.
  • In a large bowl, with a mixer on medium-high speed, cream together butter, Stevia in the Raw, and 1/4 cup Sugar in the Raw until well combined. Add egg and corn syrup and beat until smooth. Mix in the flour mixture, then refrigerate the dough for 1 to 2 hours until it's easy to work with.
  • In a small dish, coat the dough with 1/3 to 1/2 cup Sugar in the Raw. Shape into 3/4-inch balls and roll in sugar. Arrange the balls 2 inches apart on greased cookie sheets.
  • Bake until edges start to brown, about 7 to 10 minutes. Be careful not to overbake to ensure cookies stay moist. Let cool for 1 minute on baking sheet, then transfer to wire racks to cool completely.
