Festive chocolate cookies with a delightful blend of spices, ideal for holiday gifting.
Ingredients:
  • 70g unsalted butter, chopped
  • 37.50 gm sifted icing sugar
  • 187.50 ml sifted plain flour
  • 20.00 gm sifted cocoa powder
  • 2.50 gm mixed spice
  • 2 lightly beaten egg yolks
Instructions:
  • 1. Preheat your oven to 180°C. Cover a baking tray with non-stick baking paper. 2. Combine butter, icing sugar, flour, cocoa powder, mixed spice, and egg yolks in a food processor. Process until a ball forms. 3. Wrap the mixture in plastic wrap and refrigerate for 20 minutes. 4. Shape tablespoonfuls of the chilled mixture into balls and arrange them on the lined tray, leaving space for spreading. 5. Bake for 8-10 minutes. Once done, transfer the cookies to a wire rack to cool completely.
