Raisin Filled Spice Cookies

Spiced cookies with a surprise raisin filling - a nostalgic lunchbox favorite!
Ingredients:
  • 0.33000001311302 cup white sugar
  • 0.33000001311302 cup water
  • 1 cup raisins
  • 1.5 teaspoons butter
  • 1 pinch salt
  • 2.25 cups sifted all-purpose flour
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon ground allspice
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon salt
  • 2 teaspoons baking powder
  • 0.5 cup shortening
  • 1 cup white sugar
  • 2 eggs
  • 0.5 teaspoon vanilla extract
  • 1 tablespoon milk
Instructions:
  • In a small saucepan over medium heat, mix 1/3 cup of sugar, water, raisins, butter, and a pinch of salt. Bring to a boil and simmer until thick, stirring until the bottom of the pan is visible. Remove from heat and let it cool.
  • Preheat your oven to 375 degrees F (190 degrees C) for the perfect cooking temperature.
  • Combine flour, cinnamon, allspice, cloves, salt, and baking powder in a bowl, then set aside. In another bowl, cream shortening and sugar until smooth. Mix in eggs and vanilla. Gradually add dry ingredients, stir until well combined, then gently mix in the milk.
  • Roll the dough to a thin 1/4 to 1/8 inch thickness on a floured surface. Cut into 2 1/2 inch circles. Spoon a teaspoon of filling onto half of the circles. Top with the remaining circles, then press the edges with a fork to seal. Sprinkle with sugar and bake on ungreased cookie sheets in the preheated oven for 10 to 12 minutes.
