Deliciously moist zucchini cookies filled with chewy raisins and warm spices. Perfect for any occasion!
Ingredients:
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 1 cup white sugar
  • 0.5 cup margarine, softened
  • 1 large egg
  • 1 cup grated zucchini
  • 1 cup raisins
Instructions:
  • Combine flour, baking soda, cinnamon, cloves, and salt in a medium bowl, whisk until well mixed.
  • Use an electric mixer to blend sugar and margarine in a large bowl until creamy, for about 2 to 3 minutes. Add the egg, followed by the zucchini. Slowly mix in the flour mixture until well combined, then fold in the raisins. Cover the dough and chill in the fridge for at least one hour or overnight.
  • Preheat the oven to 375 degrees F (190 degrees C and grease two cookie sheets before baking.
  • Spoon chilled dough onto the cookie sheets, spacing them 2 inches apart.
  • Bake in the preheated oven for 8-10 minutes, rotating racks halfway through, until set.
  • Take the cookies out of the oven and let them cool briefly on the sheets before moving them to wire racks to cool completely.
