Zucchini-oatmeal cookies with cinnamon, cloves, oats, and raisins for a deliciously sweet and tender snack.
Ingredients:
  • 1.25 cups all-purpose flour
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon ground cloves
  • 1 cup shredded zucchini
  • 0.66666668653488 cup packed brown sugar
  • 0.5 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1 cup quick cooking oats
  • 0.5 cup raisins
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare two baking sheets by greasing them.
  • Combine flour, cinnamon, baking soda, and cloves in a medium bowl, stirring until well mixed.
  • Press the zucchini in a clean towel to squeeze out excess moisture.
  • In a large bowl, use an electric mixer to whip up a creamy mixture of brown sugar and butter. Add egg and vanilla, then blend in flour mixture and oats until just mixed. Gently fold in zucchini and raisins until evenly distributed. Scoop rounded teaspoonfuls of dough onto a baking sheet, spacing them 2 inches apart.
  • Bake until the bottom edges are a beautiful golden brown, about 14 to 16 minutes in the preheated oven.
