Spicy twist on classic fritters.
Ingredients:
  • 125.00 ml plain flour
  • 2.00 gm baking powder
  • 1 egg
  • 82.50 gm water
  • 3 (about 350g) zucchini, coarsely grated
  • 2 green shallots, trimmed and thinly sliced
  • 62.50 ml fresh flat-leaf parsley, chopped
  • 20.00 ml fresh mint, chopped
  • 1/2 tsp chilli powder
  • 1/2 tsp ground allspice
  • 250g haloumi
Instructions:
  • Combine flour and baking powder, then create a well in the center. Crack an egg into the well, and slowly pour in water while whisking until a smooth batter forms.
  • Combine zucchini, shallots, parsley, mint, chili powder, and ground allspice.
  • In a large non-stick frying pan over high heat, heat 2 tablespoons of extra virgin olive oil. Cook 1/4 cupfuls of batter in 2 batches for 2 minutes on each side. Remove from pan and set aside.
  • Slice the haloumi into 9 pieces, cook for 1 minute on each side, then layer with zucchini fritters and stack, finishing with a sprinkle of fresh mint leaves.
